Today I am bringing this cruciferous veggie usually hidden in the shadows, out into the light.

Since eating a low carb diet for several months, cauliflower has been my BFF. It has super powers of emulating eating comfort carbs without excessive carbs!

Regardless of if you are eating a low carb diet or are just trying to up your veggies in your meal rotation, this is for you.

There are lots of reasons I love cauliflower. Mostly because it makes rich comfort food healthy, but also for its many health benefits. Full of Vitamin K  (20% DV) and Vitamin C (77% DV) to name a few along with high fiber content and therefore a low carbohydrate count.

If you follow me on social media you probably see my daily #mommysbowl smoothie. In my opinion my daily smoothie is better than any bowl of ice cream because I don't get the sugar crash afterwards. I try my best to whip up my daily smoothie bowl when my two year old is napping, because we all know if she is around half of my smoothie is gone. ;) My smoothies are thick and creamy, hence replacing my ice cream vice. Avocados are a mainstay to up the creamy factor, but cauliflower is my new favorite to add bulk, cream and texture without the sugar from adding banana.

Adding cauliflower is also very easy to include in weekly meal prep to have on hand throughout the week. Chop cauliflower into small to medium florets and flash steam and then freeze. Once the cauli is lightly steamed (which helps the body break it down without digestive issues), I lay the steamed florets on a tray to harden before keeping in a ziploc bag for the week in the freezer. If you freeze without flash freezing you will have one huge ice chunk of cauli!

I add 1-2 cups of frozen cauliflower to my smoothie to help make it the perfect ice cream consistency!
