Simple Vegan Banana Oat Cookies

Do you dream of the day when you eat cookies for breakfast?
No guilt attached? No sugar high to ensue? Maybe you are a cookie fanatic like me and need another excuse to eat more of them?
Either way, this no fail cookie recipe takes a minute to throw together and has absolutely no sugar but miraculously has taste. (Unless you add in a few chocolate chips for which I will not judge!). I bet you even have all the ingredients on hand. #Winning
There's lots of freedom to make these cookies "trail mix" style which means whatever other goodies you have on hand will probably work well in these. Perhaps a half cup of peanut butter, roasted peanuts, chia seeds, raises, chopped nuts or even cocao nibs?
Get creative as you want or keep it simple and follow the recipe below.
•2 ripe bananas
•1C unsweet applesauce ⠀
•1/2C shredded coconut ⠀
•1 tsp vanilla⠀
•1 tsp cinnamon ⠀
•1/2C Enjoy Life chocolate chips (optional)⠀
- Blend banana, applesauce, cinnamon, vanilla together until mixed well. Easiest to use a food processor or blender, otherwise mash well. Stir in coconut, oats, chips and fork into tablespoon size balls.⠀
- Bake at 350* for 25-30 minutes. Makes about 15-17 cookies. These can be frozen, but likely won’t make it that long ;)
*Since there’s no raw eggs; this can be a safe “cookie dough” to eat raw.
