Nourishing Pregnancy Sweet Potato Protein Smoothie
It's Fall! Which means an excuse to eat even MORE sweet potatoes. Since I don't eat grains, finding an acceptable starch is always a pleasure. Mother Nature has it right by providing us with this tubor. These little guys pack a whopping 377% of our daily Vitamin A requirement!
This is also my inaugural smoothie post with our new Blendtec! We did our research between it and a Vitamix. I must say Blendtec sold us (plus it was a few hundred dollars less!). Either of these fine machines will obliterate anything you put in it. Maybe I will do a comparison post about that later...
Are you up for a little surprise? Dandy Blend makes a guest appearance! Or instant coffee for those of you who have not made the conversion. This is also loaded with "real food" protein verses protein powder which is typically packed with all sorts of fillers, artificial sweeteners, and poor quality protein. Ready for the recipe already?
- 1 Small - Medium Cooked Sweet Potato (cooled)
- 1/2 Banana
- 4 raw eggs
- 1 C Coconut Milk (or other milk alternative)
- 2 T Beef Gelatin
- 2 T Dandy Blend (or instant coffee)
- 1 T Vanilla Extract
- Dash of cinnamon
- Dash of Stevia or 1 T raw honey
- Dash of Salt
- 2 C Ice
- Optional: Top with flaxseed, raisins, or honey
