Cinnamon Bake Quinoa Bars

Are you suffering from breakfast burnout? Worry no more, because today I bring to you a simple recipe that - WAIT FOR IT - you can make AHEAD OF TIME, IN BULK, that will make breakfast simple, delicious & delightful. Of course, I must give credit to where credit is due, the great Auntie Pat first shared this recipe with us, now a main staple.

No need to hold your breath any longer, gather your ingredients, and get to it!

Cinnamon Quinoa Breakfast Bars


1C Dry Quinoa (or three cooked cups packed & cooked)

2C Water

1/4t Salt

4 Eggs, beaten

1/3C Vanilla Almond Milk

1/2t Salt

2T Coconut Oil, melted

1t Vanilla Extract

1T Cinnamon


  1. Cook quinoa by bringing to a boil 2 cups of water and 1/4 teaspoon salt, add quinoa then turn heat to low and put lid of for 15 minutes. Let sit off the heat with the lid on for 5 minutes and fluff with a fork. Let cool to room temperature.
  2. Preheat oven to 375*, and place the quinoa in a large mixing bowl. Place in a greased 8X8 pan (if doubling use a lasagna bake pan).
  3. In a small bowl whisk eggs, almond milk, vanilla, coconut oil, and cinnamon until thoroughly combined. Add syrup and whisk.
  4. Add egg mixture to cooked and cooling quinoa, use a large spoon to mix thoroughly. Spread evenly in the baking pan, and sprinkle with turbinado sugar if you like.
  5. Bake for 20-25 minutes or until golden.
  6. Cool completely and cut into squares. Serve with nut butter, honey, maple syrup, whipped cream or berries.
